The – You’ll Never Make Any Other Peanut Butter Cookie Again–Cookies

Peanut butter cookies take me back to my childhood.  My mother made them, and I got to do the cross-hatched smooshing down of the cookie ball with a fork.  They were delicious.    I don’t make them much anymore.  Mostly, because I don’t need to eat cookies, but primarily because if I’m going to go to the trouble of making cookies, they’ll be chocolate chip.

This recipe has changed my mind.  The cookies happen to be flourless which is great for those with gluten issues, but mostly they happen to be easy and delicious.  My daughter-in-law, Christina,  found the recipe on the site, Joy the Baker, a great site for anyone who loves to bake or eat or both.  The recipe has only four simple ingredients and takes almost no time to assemble.  Unfortunately, it takes almost no time to eat the two dozen cookies that you get!

Flourless Peanut Butter Cookies from Joy the Baker

  • 1 cup all-natural chunky or smooth peanut butter
  • 1 cup sugar (1/2 cup brown sugar and 1/2 cup granulated sugar)
  • 1 egg
  • 1 teaspoon baking soda

Preheat oven to 350 degrees F.  Grease a baking sheet with butter and set aside.  In a mixer combine peanut butter and sugars until well combined, about 2 minutes.  Add egg and baking soda and mix for another 2 minutes.  Roll into walnut sized balls and create a criss-cross pattern with a fork.  If you’d like, add a few chocolate pieces to the top of the cookies. (My son Stefan just mixed chocolate chips right into the batter.) Bake for 10 minutes, until lightly browned.  Cool on a baking sheet for two minutes, minutes. Enjoy!
